    From garam masala to chole masala: 7 spice blends you can easily make at home

    Homemade masalas can make everyday cooking easier without filling the kitchen shelf with several packets. Grinding small batches lets you prepare blends suited to dal, sabzi, chole, sambar, rasam, pav bhaji, and biryani. The basic process is simple: get the spices ready, roast them when needed, let them cool, and then grind them into a powder. The key is to protect the aroma after grinding. Warm spices should never be stored in a closed jar because trapped moisture can cause clumps and flatten the flavour. Small batches are also easier to finish while the masala still smells fresh. With a few common whole spices and seasonings, you can build a useful homemade masala collection for regular meals throughout the week.

    1. Garam masala

    Use coriander seeds, cumin seeds, black peppercorns, green and black cardamoms, cinnamon, cloves, and bay leaf. Dry roast the whole spices on low heat for two to three minutes until they release a warm, spicy aroma, then cool them completely. Grind the roasted spices into a fine powder and keep it in an airtight container. This blend works as a finishing spice for everyday dishes. Add it just before the dish is ready to serve so its aroma stays fresh in dal, rajma, paneer, and vegetable curries.

    2. Chaat masala

    Combine roasted cumin and coriander with black salt, regular salt, black pepper, dry mango powder (amchur), and ginger powder. Lightly roast the cumin and coriander seeds, then let them cool. Grind the roasted spices and mix them with the remaining ingredients. Store the blended spice in an airtight jar. Its combination of salt, tang, and warm spice makes it useful for adding flavour to foods that need a sharper, more lively seasoning at the table.

Roast the whole spices and let them cool for a few minutes before grinding. Grind them finely, then mix it in the turmeric and red chilli powder. Keep the finished masala in a clean glass jar. The blend can become a useful seasoning for everyday vegetable dishes, especially when you want several familiar spices together without measuring each one separately at home.

    Biryani masala uses coriander seeds, cumin seeds, black peppercorns, black and green cardamoms, cloves, cinnamon, star anise, bay leaf, and mace. Dry roast the whole spices on low heat until aromatic, then cool them completely. Grind them into a fine powder and store the blend in an airtight container. Add it while preparing biryani for a concentrated mix of warm and aromatic spices. Making a small batch also lets you keep the blend ready for future meals.

    6. Rasam powder

    Rasam powder can be made using coriander, cumin and black pepper, with dried red chilli and toor dal. Use a small amount of asafoetida (hing) if desired. Lightly roast the coriander, cumin and dal, then roast the pepper and chillies briefly. Cool everything completely before adding asafoetida and grinding. The finished powder works well in tomato rasam, peppery broths and lemony dal.

    7. Chole masala

    Chole or chana masala can be made using coriander, cumin, black pepper, and dry mango powder, with optional anardana, black salt, dry ginger powder, and kasuri methi. Lightly roast the coriander, cumin, and pepper, then cool them completely. Add the dry mango powder and optional kasuri methi before grinding. Add the finished blend to chole or chana while cooking. It also works for aloo chole and kala chana when you want a tangy, spiced flavour at home.

    Mistakes to avoid while making homemade masalas

    Do not grind warm spices

    Avoid putting freshly roasted spices into a grinder or jar while they are still warm. The trapped heat can create moisture inside the container, which may affect the texture of the powder and reduce its aroma. Let the roasted spices cool completely before grinding or storing them. This is important even when making a small batch. Once cooled, the dry powder is easier to store and retains its flavour for longer.

    Do not use moist ingredients

    Avoid using spices, curry leaves or other ingredients that contain moisture when preparing a dry masala. Excess moisture can make the powder lumpy and affect its freshness. Check the whole spices before grinding and discard anything that smells musty, stale, or unusual. If an ingredient has picked up moisture, dry it briefly over very low heat and let it cool completely before grinding.

    Do not over-roast the spices

    Avoid roasting the spices for too long or over high heat. The aim is to bring out their aroma without burning or darkening them too much. Coriander should turn slightly deeper in colour and develop a mild smell without browning. Pepper can become harsh when overheated, while bay leaves and star anise may turn bitter. Roast delicate spices for a shorter time and keep the heat low. For some masalas, you can also use the spices without roasting them to retain a lighter and fresher flavour.

    Make small batches of homemade masala

    Avoid making a large batch of homemade masala at once. Smaller batches are easier to use while the spices still have a strong aroma. Prepare only enough to last about two to four weeks, and use it sooner during humid weather. Store the powder in a completely dry, airtight glass or steel container. Keep it away from sunlight, the stove, and steam. Always use a clean, dry spoon and close the container tightly after each use to help preserve the masala’s flavour and freshness.
